Barm Brack This recipe is steeped in tradition. There are many items that can be found within the cake which suggest various different things for the recipient. If you get a ring it suggests that you will be married within one year, a coin could suggest you will get rich... Make 1 cake 8floz/ 250ml strong cold tea 1lb/ 400g mixed dried fruit 1 teaspoon mixed spice or pumpkin spices mix extra for the syrup 7oz/ 225g plain (all purpose) flour 6oz/ 175g brown sugar 1 egg, lightly beaten 2 teaspoon

Barm is what makes Barmbrack rise. Our ancestors could make barm from potatoes. They would peel, boil and mash them, cover with water, and leave by the fire to ferment.
